Brazilian Style Black Beans

My brother brought this recipe back from Brazil, I tweaked it into a bit healthier version then the original (which called for lots of bacon and sausage).

Start by soaking the black beans in water and then placing in a slow cooker (2 cups beans, with 6 cups H2O). Then I added lean turkey kielbasa, this is sliced and placed with the beans to cook for 6 hours on a medium heat.

An hour before the beans are ready start to cook brown rice in a pot. To make the tomatoes and olive salad, slice 1 tomato, and dice one jar green olives, add chopped garlic and white 1/4 cup white vinegar, set aside in fridge.

When the beans are close to tender, chop up one onion, and garlic and simmer in pan until translucent. Add the beans and kielbasa with an extra cup of the water, salt and pepper. Simmer all together for 20 minutes. Serve the beans an kielbasa over rice and the tomato salad on top or on the side.
