Flounder Tostadas

This is a really easy tostada idea. I used store bought toastas { however, you could make your own by baking corn tortillas until crispy.}

Cook flounder fillets until flaky, take a fork and pull the fish apart into smaller pieces. Add lemon juice, a little olive oil and cilantro.

Now just layer the tostada with beans, (I used vegetarian refried beans), flounder, lettuce, olives, tomatoes, cheese, and guacamole. Many ingredients can be substituted depending on your availability.
