Day 28

Whole Wheat Cranberry Orange Scones

This is my moms all time favorite scone recipe.

Combine the following:

2 1/4 cups whole wheat flour
1/3 cup cane sugar
2 T. grated orange peel
2 tsp baking powder
1/2 tsp baking soda

Cut in 1/2 cup butter (or margarine) until crumbles.
Add 1 cup cranberries that have been coarsely chopped
Add 1/2 cup buttermilk (or mix 1/2 milk and 1/2 T. vinegar) and 1 tsp. vanilla.

Form this all into 2 balls and flatten into 6" circle, 1/2" thick. Cut into wedges, bake at 400 for 10-15 min.

For the glaze mix together fresh squeezed orange juice and powdered sugar until desired consistency. Spread over slightly cooled scones. Finish with grated orange peel.
