Day 14:
Sesame Tofu with fresh Broccoli and Quinoa
Start by making the quinoa, just like rice. I like to add some chopped onions ans garlic for flavor. Steam the Broccoli.
Take pressed tofu and cut in squares. Toss with corn starch. Heat pan with olive oil and place coated tofu in pan. Cook until brown on all sides.
Mix together 1/4 cup chicken broth or orange juice (the oj will give it a tangy flavor), 1/4 soy sauce, and 1 tbsp sugar.
Pour sauce over cooked tofu. Bring to boil and then simmer. Sauce will coat tofu. Sprinkle with sesame seeds.
