Day 20

Hearty Healthy Chicken Wild Rice Soup

This fall time soup can be made quickly in a crock pot and cook slowly throughout the day.

  • 1/2 cup uncooked wild rice
  • 1/2 cup uncooked brown rice
  • 3 tablespoons butter
  • 1 onion, chopped
  • 1 cup chopped celery
  • 2 carrots chopped
  • salt, pepper, garlic to taste
  • 3 cups low sodium chicken broth
  • 1-2 cups skim milk (add to form consistency)
  • 2 cups diced raw chicken
Place all ingredients in crock pot and set on low, cook for 6-8 hours. Season to taste, garnish with dried spinach or parsley. Served with wholegrain toast.
