Day 19

Cajun Tilapia with Dill Sauce over Quinoa

Start by making the Quinoa, cook with chicken or vegetable broth until tender. I like to add chopped carrots, onions, and peppers and olive oil. Set covered until fish is done to tenderize the vegetables.

For the dill sauce, add 1 tbsp dill, 1/2 cup sour cream or yogurt, 1/2 maynoise, 1/4 cup fresh lemon juice and salt to taste. Set aside at room temperature until served.

For the Cajun seasoning, you can use already made or make it your self.
Here is the recipe I used:
• 2 1/2 tablespoons salt
• 1 tablespoon dried oregano
• 1 tablespoon paprika
• 1 tablespoon cayenne pepper
• 1 tablespoon ground black pepper

Mix Cajun seasoning with 2 Tbs flour. Coat the tilapia in the flour mixture and place in pan with olive oil. Cook slowly on both sides until fish begins to flake.
