Day 30

Thai Spring Rolls

1 package large dried rice wrappers
1 cup fresh coriander leaves
1 cup fresh sweet basil, roughly chopped if leaves are large
1/2 large cucumber, sliced into matchstick-like pieces
1 carrot, grated
1 cup fresh bean sprouts
rice vermicelli noodles

Place rice wrapper in warm water until soft, take out of water and roll ingredients inside. Eat right away or place in cool place with a wet towel over rolls. Best served with Peanut Sauce.
