Tofu Peanut Skewers over Maftoul Salad

Start by pressing tofu to eliminate excess water. Cut tofu and place on small skewers. Cook on medium heat with olive oil in pan until tofu is browned on all sides.

For Peanut Sauce: Add 1/2 cup creamy or chunky natural peanut butter in small sauce pan, add 1 tsp garlic, 1tbs soy sauce and lemon juice. Cook on low until creamy, you may want to add water depending on consistency. Keep on very low heat until ready to serve.

Maftoul Sald is a easy middle eastern salad made with whole wheat Israeli Couscous. Cook couscous in chicken broth until tender. Add chickpeas, diced bell and red pepper, red onions, cilantro, salt and drizzle with olive oil. Toss salad together and set in fridge, I prefer it cold but could be served warm as well.

Serve tofu skewers over salad and pour peanut sauce on top. Garnish with cilantro or parsley.
