Roasting tomatoes is easy, tart buy using cherry, romas, or any other tomatoes variety. Cut in desired size, wedges or slices. Place parchment paper on a cookie sheet. Heat oven to 300 degrees.
Place tomatoes, garlic, basil, on sheet. Sprinkle olive oil, and salt over top. Back for 1-2 hours until tomatoes become slightly wrinkled and browned.
Use tomatoes in pasta, salad, on pizza, or puree with cream cheese, or ricotta and use as a spread.
